Baked Oatmeal 

This recipe is a family favorite. Last week we had an evening where our plans changed and I needed to come up with a quick dinner. 2 kids had strep throat and the baby had a virus so we needed something easy. My kids are huge fans of having breakfast for dinner so we enjoyed omelets with a berry baked oatmeal.

Ingredients:

2 eggs

1 stick of butter or half a cup coconut oil

1 teaspoon vanilla

1 cup honey or sugar

1 teaspoon cinnamon

1 tablespoon baking powder

1/4 teaspoons salt

3 cups of oatmeal

1 cup of milk

1/2 – 1 cup of fruit

Preheat the oven to 350. Mix the melted butter, eggs, vanilla and sugar. Add dry ingredients. Mix thoroughly then add milk. I like to add the fruit to the bottom of the 8×8 dish. Bake for 30-45 min (until golden brown on top).

You can make so many different versions of this dish – blueberry and cinnamon, banana and walnut, peanut butter and chocolate chips, diced apples with spices. Enjoy!
