Coconut Orange Balls

When I was asked to bring my favorite Christmas food to a gathering I suddenly remembered these coconut orange balls my mom made when I was a little girl. My mom sent the recipe to me and I went to work making a gluten-free version. They were just as delicious as I remembered.

Ingredients:

12 oz box of gluten-free animal crackers or gluten-free shortbread cookies (Vanilla Wafers can be used for people without food sensitivities)

6 oz. orange juice concentrate

1/2 cup (one stick) melted butter

2 cups (sifted) powdered sugar

7 oz flaked coconut

Place the animal crackers/shortbread cookies in a Ziploc bag and crush (this is great for releasing any holiday frustration).

Mix the melted butter and orange juice concentrate then add the powdered sugar and animal crackers. Stir until the ingredients are combined. Use a Tablespoon scoop to form the balls. Place the coconut in a separate, shallow bowl and roll each ball until covered with coconut. Line a cookie sheet with parchment paper and place the balls on it and then place it in the freezer until they are firm. Transfer to an airtight container and keep frozen until you serve.
