One of the things I absolutely love about this time of year is cooking hearty soups for dinner. Since I often try to cook our dinner around lunchtime, Monday afternoon I chopped up the ingredients for this tomato soup recipe and left it in the slow cooker.The soup cooked while we hiked and was ready to be pureed when we returned. So quick and easy! This was the first time I’ve used fresh basil and it made a huge difference (I’m obsessed with Skinnytaste recipes). Though I did forget to buy broth and the soup was a little less full-flavored than it has been in the past. It’s a much heartier tomato soup than the canned version (and healthier too!) Before I left for my dinner out with friends, I quickly made a few grilled cheese sandwiches and dinner was ready. Mike said 2 of the 3 kids loved it and asked for seconds, so I’m calling it a win.
