Since my family has returned to “Meatless Mondays” and since it truly feels like fall, we are enjoying a lot of soups for dinner. Several years ago I discovered this hearty Garden Vegetable Soup. Served with a side of cornbread or rolls, it is very filling and healthy.
I have to be honest, though: while I enjoy it, my kids do not like it and make sure I know it is not their favorite. Sometimes I sprinkle a little cheese on top of their soup to make it more palatable (I’m nice like that).
Occasionally I double the recipe and freeze half of it for a day when I need a quick meal.
