Yesterday afternoon I made these no-bake energy bites from Gimme Some Oven and they are AMAZING! Delicious, healthy and I made them in about 10 minutes. I used Bob’s Red Mill non-sweetened coconut flakes (since everything else I’ve found at the store is sweetened). The last time I made these energy bites I didn’t have flax seed and substituted oatmeal. They were ok, but last week I purchased flax seed at Aldi and it made a huge difference in the texture. I keep them in the freezer so I have a healthy option when I’m craving chocolate and peanut butter.
