Someone recently asked my advice about gluten-free flour. I’ve tried many gluten free flours over the past decade of attempting to bake sans gluten and let me tell you: baking with gluten-free flour can present some serious challenges. At one point I loved cooking with rice flour, but found the consistency was difficult to work with when baking. I’ve tried so many gluten free flours, but my current favorite is Bob’s Red Mill 1 to 1 baking flour. I only discovered this flour because my mother-in-law purchased a large bag for me and I made scones. They were delicious and had a lovely texture – something that doesn’t always happen with gluten-free baking. I usually avoid Bob’s Red Mill flours simply because I dislike the aftertaste of most of their gluten-free flours/mixes. This one is a winner, though.
