Once A Week Cooking

The holidays are not usually the time when I implement changes in our home. This past Christmas, though, I made a slight change that has significantly helped our mornings feel less chaotic.  All the credit goes to Humorous Homemaking. A week before Christmas she posted her breakfast hack on Instagram and I had a “why-didn’t-I-think-of-that” moment. Her idea: spend part of Saturday morning baking breakfast for the following week. Brilliant.

Taking the time to make a large batch of something for breakfast does not take long and has significantly improved our mornings. I usually freeze whatever I’ve baked and remove what we need for breakfast the night before. Of course, you could always simply buy something at the store too – whatever works! Having something ready to eat each morning and not having to think about preparing breakfast has been AMAZING.

Last Saturday morning  I quadrupled this recipe for baked oatmeal and boiled about two dozen eggs. No one has complained about eating the same thing “every morning.” My kids don’t love boiled eggs, but they eat them if it means enjoying a delicious muffin.  Mike is rarely home in the mornings so this has helped me feel less frazzled trying to get everyone out the door for school – I’ve even had time to read to the kids while they eat breakfast.
