When I worked full-time I made a salad box almost every weekend and enjoyed it throughout the week. Today I prepared one and wondered why I ever stopped. Everything was washed, chopped and ready in less than 30 minutes. Sometimes not having to go to work makes me think I have more time to prepare healthy food when the reality is that with 3 kids under 5, my times is limited. Often it is easier to grab something quick for lunch (chips and salsa!) instead of taking the time to make something healthy. Since Mike was home and could supervise the little people I went ahead and chopped a bunch of lettuce and veggies for the upcoming week.
I’m finding the little choices I make add up soooo…here’s to making it a little easier to choose a salad over nachos. Have an awesome weekend!
