Taco Lettuce Wraps

I’m so ready for cooler weather (I can’t believe I actually typed that, but it’s true). We still have several weeks of very warm weather here so I’m always looking for meals that are healthy but don’t require me to use the oven (and thus make my kitchen feel like a sauna). This is one of my all-time favorite summer recipes to serve when it feels too hot to cook. It’s also a go-to recipes when my family has a busy evening. You can prepare everything ahead of time and simply warm the ground turkey/beef before serving. A healthier version of a taco night, these lettuce wraps are delicious and filling. Enjoy!


Romaine lettuce

Shredded Mexican cheese

Sliced black olives

Diced Sweet peppers

Diced Onions

Diced Tomatoes

1 lb ground beef or turkey (brown with 1 Tablespoon cumin and 1 Tablespoon chili powder)


Sour cream


You can also include bacon bits for extra variety/flavor.


I usually spread the sour cream or guacamole on the lettuce first and then add the other toppings. But, obviously, there is no wrong way to eat the lettuce tacos. Except to not eat them.
