I am a creature of habit. I find routine comforting. This can be a problem, though, when it comes to the meals I cook. It is easy for me to serve the same thing over and over again to my family. People have been known to arrive at the dinner table only to ask, “We’re having this again?!”
I’ve never been super adventurous in the kitchen, so I decided to try a new recipe every month. I’m pretty much obsessed with Gina’s blog, Skinnytaste. Every recipe I’ve tried is delicious and good for you. When I first discovered this recipe for slow-cooker Banh Mi Rice Bowls I asked my mom if she thought this would be too spicy to serve to my kids. Since she said kids need to expand their palates, we tried it. While it was not a huge hit with them (minus the pickled carrots – Kate adored them), I absolutely loved these rice bowls. They are easy to make, filling and a perfect blend of flavors.
